Caroline’s Scrumptious Apple Cake

Apparently this cake is great if you’re watching the weight as there’s hardly any fat in it (does that mean you can eat more – ed.)
This looks great…  


You will need…

Unsalted butter (to grease the cake tin)
900g (about 5 whole) apples – all the better if they’re freshly picked from one of the fabulous orchards on Île d’Orléans
3 tbsp lemon juice
Lemon zest
Half a cup of sugar
3 quarters tsp of ground cinnamon
1 large egg
1 and 1 quarter of a cup of white flour
2 tsp of baking powder
1 third of a cup of partly skimmed milk (2%)
Half a cup of cream (this is optional and not absolutely necessary)

 

 
 
 
 
 

 

 
 
 

Preheat the oven to 205°C/400°F.
Butter the baking dish.
Peel and core the apples, then cut each into wedges.
Mix together with the lemon juice, a tablespoon of sugar and the cinnamon in a bowl. Then put to one side.
Take another bowl and add the egg and the rest of the sugar. Beat together.
Stir in the baking powder and the (all purpose) flour.
Add the lemon zest and milk.
Mix together to create a batter mixture.
Add 2 thirds of the apples into the mix and then move it all to the baking dish/cake tin.
Put the left over apple wedges on the top (with their juice if there is some). 
Place the cake tin on the middle oven shelf and cooke for 40 minutes.
Prod gently with a knife to see if the cake is fully cooked.
Once cooked, let the cake cool down for about an hour. It is then ready to be served.


What to do next…

 

 

As a finishing touch, serve the cake with cream if that’s to your liking.
