Marc-André Fillion is, what we call, a mixologist.

A cook works in a kitchen but a mixologist works behind a bar. Mixology is a popular term that allows Marc-André to make more elaborate alcoholic beverages. While respecting certain norms and regulations, he works with the rule of three. He must respect the composition of a drink which is a spiritual, one part bitter, and one part sugar.

This is the equivalent of an old fashioned. This drink was the first to be invented in the United States at the end of the 19th century. It is also the name of a glass in which many cocktails on ice are served. Overall winner of the Made with Love 2011 mixology competition, Marc-André Fillion offers his services to individuals and restaurants (www.mixologiequebec.com) to build your cocktail menu and to have suggestions about bar functioning. The cocktails at L’Atelier were made by Mr. Fillion. The Foodistas also taste his creations at Le Boudoir once a week.

Mixologists go for a simpler recipe just like chefs. They are more precise during the assembly and work with the chemistry of the liquids. Together, some flavours can taste like a carrot cake.
